Using a sharp knife is very important; and keeping the blade honed is the first skill every culinary student learns. Although it may sound counter-intuitive, a sharp knife is definitely safer to use than a dull one. When it's time to chop, slice or cut quickly, a dull knife can't be trusted to cut uniformly. Not only will a dull blade tear up ingredients, something as simple as slicing a tomato becomes a hazard to your fingers. Dull blades have a tendency to unexpectedly slide off of skins of onions, tomatoes, and other round fruits.
